When the police pulled you over they were not just looking to give you a traffic ticket.  They also look to see if you are committing any other crimes.

In the case of a DUI they examine your eyes, speech, breath, mental condition, and movement.  They will also ask you to admit drinking alcohol or taking drugs.

IF they think they have enough reasonable suspicion that a crime is being committed they will ask you to exit the car to take field sobriety tests.  The best way to see if they instruct them properly is to consult the National Highway Traffic Safety Administration, NHTSA, manual for DWI Detection.

There are three standardized tests: the walk and turn, horizontal gaze nystagmus, and one leg stand.  There are also some non-standardized tests mentioned in the manual, but not generally accepted.
